    Orecchiette alls carbonara casserole

    1 lb. orecchiette (or other type of pasta) cooked and drained
    1 Tbs olive oil
    8oz. ham, cut into thin strips
    2 cloves garlic, minced
    1 cup sliced mushrooms
    1 cup green peas
    1/2 tsp. salt
    1/4 tsp. pepper
    3 cups half & half room temp
    1/2 cup grated parmesan cheese
    2 Tbs chopped fresh parsley
    Parmesan cheese and parsley to garnish if desired

    Preheat oven to 350. Place cooked pasta in a buttered casserole dish. Heat olive oil in a large skillet, over med-high heat. Add ham and cook until ham begins to brown. Add garlic and cook until fragrant, stirring frequently, about 30 seconds. Add mushrooms and cook 3 min. stirring occasionally. Add peas, salt and pepper. stir to combine and cook until peas are hot. Remove from heat. Stir in half & half, parmesan cheese and parsley. Pour over pasta in casserole dish. Bake until casserole is hot and bubbly around the edges, about 20-30 min. Sprinkle with extra Parmesan cheese and parsley if desired.

    Sounds yummy!
    I worked for Italians many years ago and was able to enjoy some wonderful foods that weren't on the menu.
    Have you made time to listen to the birds today........
