Saw this on another board and thought it looked interesting, but won't have an occasion to try it right away, as I already have something planned for Mother's Day.
SPRING DELIGHT
1 ANGLE FOOD CAKE
1 QUART VANILLA ICE CREAM
1 PINT STRAWBERRIES
1 PINT BLUEBERRIES
1 CAN MANDARIN ORANGES, DRAINED
1 PKG STRAWBERRY GELATIN
1 PKG LIME GELATIN
1 PKG ORANGE GELATIN
1-8 OUNCE COOL WHIP
Divide cake into thirds and break into bite sized pieces. Dredge
1/3 of cake in dry strawberry gelatin and put into bottom of tube pan.
Add strawberries and 1/3 vanilla ice cream. Dredge next 1/3 of
cake in lime gelatin and put in cake pan with blueberries and 1/3 more of
ice cream. Dredge last 1/3 of cake in orange gelatin and add to
pan with oranges and another layer of ice cream. FREEZE until 1/2 hour
before serving. Remove from pan and frost with COOL WHIP OR
HOMEMADE WHIPPING CREAM.
