My DH was in Japan and got to try a "pickled" radish that he REALLY LIKED called a Daikon radish so he has it growing in our garden and he just brought me in two to prepare. Went to Publix Supermarket and got these recipes. I am making the pickle one tomorrow.
DAIKON RADISHES
Steam, serve with sprinkling of herb vinegar or a little sugar.
Shred radish, saute it in sesame oil with a pinch of sugar and a little soy
ASIAN-STYLE PICKLED DAIKON
Combine
2/3 cup rice vinegar
1 TSP. Soy
Marinate sliced radish in vinegar mixture overnight. Drain, sprinkle with toasted sesame seeds (you can also do this with cucumbers)
DAIKON SAUTE RECIPE
3 cucumbers, quartered and cut into 1" pieces
1 lb daikon, cut in large chunks
2 TBSP cider vinegar
2 TSP. margarine
1 TBSP. lemon juice
Fresh mint--optional
Easy Steps:
1. Combine cucumbers, daikon and cider vinegar in bowl. Toss and allow to stand for 30 min.
2. Drain vegetables; saute in margarine for about 5 minutes. Vegetables should be tender, but still crisp.
3. Sprinkle with lemon juice and serve. Garnish with mint leaves if you wish. Serves 4.
NUTRIENT ANALYSIS PER RECIPE SERVING: Calories-59, Carbs-9g, Protein-1g. Cholesterol-0mg, Sodium-54mg, Fiber-2g, Fat-2g (41% of calories from fat).
SELECTION & STORAGE:
Look for smooth-skinned daikon, with a pearly white sheen. Avoid those with flat color, they are not as fresh. Daikon does not store well, it loses its flavor and becomes limp. Use the day of purchase if possible.
PREPARATION:
Daikon is simple to prepare. Simply scrub with a brush and slice, dice, grate or carve–daikon makes beautiful garnishes and is often used alongside dishes carved into flowers or other shapes.
