Pill Bottle Cookies
anyone ever make this cookie ?
Ingredients:
11/4 c. softened butter, divided
1/3 c. heavy whipping cream
2 c. all-purpose flour
1/3 c. granulated sugar for decoration
3/4 c. powdered sugar
1 egg yolk
1 tsp. vanilla extract
Directions: Heat oven to 375*F. Combine 1 c. butter, whipping
cream and flour thoroughly. Chill for 1 hr. On a lightly floured
surface roll dough out to 1/8" thickness. Cut into 1 1/2"
circles. Transfer circles to a tray or waxed paper sprinkled with
white sugar. Place sugar coated circles onto an ungreased cookie
sheet. Prick in 4 places with fork,forming a "prick box". Bake
for 7-9 minutes or until slightly puffed. Let cool then put the
bottoms of 2 cookies together with Creamy Butter Filling: Blend
the 1/4 c. butter, powdered sugar, egg yolk and vanilla until
smooth. If desired tint filling with food coloring of your
choice. Makes 5 dz. or 30 servings.
