The Great Pumpkin Cookies
4 Cups All-purpose Flour
2 Cups Quick Old-fashioned Oats
2 tsp Baking Soda
2 tsp Ground Cinnamon
1 tsp Salt
1 1/2 Cups Butter
2 Cups Brown Sugar, packed
1 Cup Granulated Sugar
1 Egg
1 tsp Vanilla Extract
1 Can (16 oz) Solid Pack Pumpkin
1 Cup Semi-sweet Chocolate Morsels
Preheat oven to 350 degrees.
Combine flour, oats, soda, cinnamon and salt; set aside. Cream butter;
gradually add sugars beating well until light and fluffy. Add egg,
vanilla and pumpkin; mix well. When combining different mixtures,
alternate dry ingredients and pumpkin mixure, mixing well after each
addition. Stir in morsels.
Drop 1/4 cup dough onto greased cookie sheet 2-inches apart. Bake at
350 degrees for 20 - 25 minutes
