Green Beans with Lemon Butter: (Fagiolini al Limone)

2 c.chicken broth
2 c.water
1 lb.fresh green beans
1/4 c.butter
1 small onion,thinly sliced
3 Tbls.lemon juice
1 egg,beaten
1 Tbls.chopped fresh parsley

Heat chicken broth & water to boiling.Add green beans.Cover & boil about 8 minutes or til tender,drain.

Heat butter in 10" skillet over med-high heat.Saute onion in butter.Add beans & lemon juice,stir in egg.Cook 3 minutes,stirring frequently,til egg is cooked.Sprinkle with parsley.
