Tortellini Soup: (Tortellini in Brodo)
Serves 8-10

2 cloves garlic,finely chopped
2 medium stalks celery,chopped
1 small onion,chopped
1 medium carrot,chopped
3 Tbls.butter
8 c.chicken broth
4 c.water
2 pkgs.(10oz.each)dried cheese-filled tortellini
2 Tbls.chopped fresh parsley
1/2 tsp.pepper
1 tsp.freshly grated nutmeg
freshly grated Parmesan cheese
Cover & cook garlic,celery,onion & carrot in butter in 6 qt.Dutch oven over med-low heat 10 minutes.Stir in chicken broth & water.Heat to boiling,reduce heat.Stir in tortellini,cover & simmer 20 minutes,stirring occasionally or til tortellini are tender.
Stir in parsley,pepper & nutmeg.Cover & cook 10 minutes.Top each serving with cheese.
