Mixed Vegetables Italienne:

1/4 c.vegetable oil
1(1 lb.)can tomatoes
1 beef bouillon cube
4 c.zucchini,cut in 1" cubes(about 1&1/4 lbs.)
1&1/2 c.green pepper cut in 1" pieces(about 1/2 lb.)
1 c.sliced carrots
1 c.peeled,diced potatoes
1 c.coarsely chopped onion
1 tsp.oregano
1&1/2 tsp.salt
1/8 tsp.pepper
1 c.frozen peas
1/2 tsp.cornstarch mixed in 1 tsp.water
Combine all ingredients except peas & cornstarch in saucepan.Cover,bring to a boil,reduce heat & simmer.After 15 minutes,add frozen peas.Coninue to simmer,covered,til veggies are tender.Thicken with cornstarch dissolved in water.
