    Vegetable Cobbler:

    Serves 8-10
    Not T&T

    4 c.cooked mixed vegetables(ie limas,peas,string beans,corn &/or carrots)
    1&1/2 c.stock
    1 tsp.oregano,dill weed or thyme
    1/2 tsp.pepper
    1&1/2 c.whole wheat flour
    2 tsp.baking powder
    1 tsp.salt
    1/2 c. cornmeal
    2 eggs,beaten
    1 c.milk or broth
    1/4-1/2 c.grated sharp cheddar cheese

    Grease a 9"x13" baking dish.Heat veggies in stock & pour all into greased baking dish.Stir together herbs & seasonings,whole wheat flour,baking powder,salt & corn meal.Add beaten eggs & milk or broth & mix til well distributed.Spread batter over veggies.Bake in a 425 degree oven for 20-25 minutes.Immediately after removing from oven,sprinkle with grated cheese.
