BERRIED TREASURE
4 ozs semisweet chocolate
6 large waffle cones
1/2 cup colored or raw [turbinado] sugar
3 cups mixed berries [raspberries, strawberries, blueberries]
Raspberry Coulis [recipe follows]
mint sprigs, as garnish
Heat chocolate in small saucepan over medium heat until melted, stirring frequently. Brush inside of cones with melted chocolate and dip edges in sugar:; stand upright in small glasses and refrigerate until set, about 15 minutes.
Combine berries in bowl; spoon into cones and drizzle with raspberry coulis. Lay cones on plates. Garnish with mint.
Raspberry Coulis
1 package [10 0unces] frozen raspberries, thawed
2 TBSP. sugar
Process berries in blender until smooth, strain through fine sieve into small bowl. Stir in sugar. Refrigerate, covered, until serving.
ADVANCE PREPARATION TIP: Cones can be coated with chocolate and stored, covered at room temperature, up to 1 week.
PRESENTATION TIP: For a more formal alternative, serve cones upright in tall fluted glasses.
