From our local paper......sounds good:
Chipotle Chicken
3 med red onions
4 chipotle peppers in adobo sauce
4 large breasts on the bone w/ skin
Grate 1 onion on the large holes of grater and place onion and juices in large bowl. Thinly slice the remaining onions and add to bowl. Chope the peppers and a little of their sauce and add to bowl along w/ the breasts. Add 1/2 tsp kosher salt and toss all well. Cover and refrig for an hour. Preheat oven to 350.
Place chicken on baking sheet and slip onion slices under the breasts. Bake for 40 min or until breasts are cooked thru. Top w/ the browned onions that were underneath and salt/pepper to taste.
