This was in our local paper and I thought it sounded like an interesting combo:
Crostini w/ peaches and blue cheese
12 thin slices of baguette
olive oil fro brushing
3 - 4 ripe peaches
2 T balsamic vinegar
1/4 - 1 c crumbled blue cheese
fresh ground black pepper
Lightly brush the bread w/ OO, then toast, bake, grill or broil until toasted.
Bring a large sauceepan of water to a boil and add whole peaches and boil for 30 secs. Use slotted spoon to transfer the peaches to bowl of ice water. Once cooled, remove the peaches and rub off the skin.
Cut the peaches into thin slices and toss w/ balsamic vinegar.
Arrange bread on baking sheet and top w/ peach slices and top w/ blue cheese and pepper, if desired. Broil until cheese starts to melt. Can be served warm or at room temp.
