ZESTY LEMON VINEGARETTE
1/2 cup lemon juice
2 T chopped fresh flat-leaf parsley
2 T water
1 T chopped fresh or 1 t dried oregano
1 T olive oil
1 T honey
1 T Dijon mustard
1 t salt
1/2 t fennel seeds, crushed
1/4 t crushed red pepper
2 garlic cloves, minced
Combine all ingredients in a jar. Cover jar tightly, and shake vinaigrette vigorously.
