Lemon Tea Cookies
3/4 c. butter (NO substitutues), softened
1/2 c. sugar
1 egg yolk
1/2 tsp vanilla extract
2 c. flour
1/4 c. finely chopped walnuts
FILLING:
3 TBSP. butter, softened
4 1/2 tsp. lemon juice
3/4 tsp grated orange peel
1 1/2 c. confectioners' sugar
2 drops yellow food coloring, optional
In a mixing bowl, cream butter and sugar. Beat in egg yolk and vanilla. Gradually add flour. Shape into 2-14 in. rolls; reshape each roll into a 14in.x1 1/8in.x1 1/8in. block. Wrap each in plastic wrap. Refrigerate overnight.
Unwrap and cut into 1/4in. slices. Place 2 inches apart on ungrased baking sheets. Sprinkle 1/2 of the cookies with nuts, gently pressing into dough. Bake at 400 for 8-10 minutes or unitl golden brown around the edges. Remove to wire racks to cool.
