    1 1/2 c. hot water
    3 l/2 tsp. decaf. instant coffee granules
    l/2 c. Mascarpone cheese or 4 ounces reduced fat cream cheese
    8 oz. fat free cream cheese
    l/8 cup dark brown sugar
    1 cup Splenda granular
    l/2 tsp. vanilla extract
    1 sugar free angel food cake(16 oz) cut into 1 inch cubes
    2 tsp. baking cocoa, divided

    Combine instant coffee & hot water. Chill in refrigerator,. In a mixing bowl, combine the Mascarpone & cream cheese. Beat until smooth. Add 3 tablespoons coffee mixture, brown sugar, Splenda & vanilla. Mix well. Set aside. Pour l/2 of the remaining coffee mixture into a 13x9x2 baking pan. Toss half of the cake cubes into coffee. Place in a medium glass serving bowl or 8 individual parfait glasses. Spoon half of cheese mixture on top. Sprinkle with 1 tsp. cocoa powder. Repeat with remaining coffee mixture, cake cubes, cheese mixture & cocoa. Cover & chill for 3 hours or overnight.
