    Caramel Apple Cupcakes


    Ingredients
    Apple Butter Cupcakes
    3 cups flour
    2 teaspoons baking soda
    1 teaspoon salt
    1 1/2 cups apple butter
    3/4 cup brown sugar
    3/4 cup sugar
    2/3 cup butter, melted
    1/2 cup sour cream
    2 eggs


    Caramel Frosting
    40 caramel candies
    6 tablespoons heavy cream

    Instructions
    Preheat oven to 350 degrees.
    Line standard-size muffin cups with paper liners.
    For cupcakes, combine flour, baking soda and salt in bowl. Beat apple butter, brown sugar, sugar, butter, sour cream and eggs in large mixing bowl on low speed until blended well and smooth. Mix in dry ingredients just until moist.
    Pour batter into prepared cups, filling half full. Bake for 25 to 30 minutes, or until done. Cool on a wire rack.
    For frosting, heat caramels and heavy cream in heavy saucepan over low heat until melted, stirring frequently. Cool for 5 minutes. While still warm and fluid, spread 2 teaspoons over top of each cupcake. (Mixture will be sticky.) Insert halved craft sticks into center of each cupcake for caramel apple effect.
    I don't suffer from insanity. I enjoy every minute of it.
