    Potato Salad Roll
    This is really pretty when it's laid out on a platter at a luncheon or gathering. Very different but it tastes great.
    if you make it let me know as I have not done so my friend posted it
    3 med potatoes, peeled and quartered
    1/3 c mayo
    1 tsp salt
    1/2 tsp paprika
    3 hard boiled eggs, chopped fine
    1/2 c chopped celery
    2 T finely chopped onion
    1 c cottage cheese
    2 T finely chopped green bell pepper
    2 T chopped pimento
    2 T mayo

    Boil the potatoes and drain them. Mash the potatoes but DO NOT ADD any liquid to them. Combine the potatoes, 1/3 c mayo, salt, paprika, eggs, celery and onion and mix well. Chill thoroughly.

    After it has chilled completely, pat the potato mixture out on a piece of foil until it is a 12x9 inch rectangle.

    Drain the liquid from the cottage cheese. Combine the cottage cheese, green pepper, pimento and 2 T mayo.

    Spread the cottage cheese mixture on top of the potato mixture, to within an inch of the edges. Beginning with the narrow side, lift the foil and gently roll up the potato mixture jelly-roll fashion. Chill thoroughly. Cut the well chilled potato roll into slices. Arrange on a platter lined with greens for best contrast.

    This will make 6 generous portions.
