    Here's another Peppermint bark recipe. It's delicious!

    12 oz. semi-sweet or special dark chocolate chips
    12 oz. white chocolate chips
    2 t. peppermint extract
    8 peppermint candy canes, crushed (I put them in a freezer bag and beat them into submission with a rolling pin!)

    Line a 9 X 9 square pan with aluminum foil. Melt chocolate chips in double boiler or microwave. When completely melted, remove from heat and add 1 t. peppermint extract. Stir to combine, and spoon the chocolate into the aluminum lined pan, spreading it evenly. Put in freezer for about 10 minutes until hardened.

    Next, make sure your peppermint candy canes are crushed. Then, melt the white chocolate chips in a double boiler or microwave. Remove from heat, and add 1 t. peppermint extract. Stir to combine, and pour this mixture over the hardened chocolate mixture. Spread evenly over the chocolate mixture. While the white chocolate is still "wet", sprinkle the crushed candy canes over the top and press into the white chocolate. Put the pan in the freezer for at least 10 minutes to allow it to harden. When it has hardened, remove from freezer, lift it out with the foil and break into pieces. Voila! Just like the fancy gourmet stuff, but much cheaper!
