    Poorman's Cookies

2 cups oats (quick or old fashioned)
    1 cup packed brown sugar
    1/2 cup white sugar
    1 cup all-purpose flour
    1/2 teaspoon salt
    1 teaspoon baking soda
    1/4 cup hot water
1/2 cup shortening or margarine (melted and cooled)
    1 teaspoon vanilla
    Optional: 1/2 cup raisins
In a mixing bowl, combine oats, sugars, flour and salt. Mix well. Combine soda and hot water; stir into oat mixture along with shortening and vanilla (mixture will be crumbly). Roll or squeeze into walnut-size balls.

Place on greased cookie sheets. Bake at 350 for about 10 minutes or until golden brown. Remove from the oven; allow to stand 2 minutes before removing to a wire rack to cool. Yields about 3 1/2 dozen.

    Crazy Cookies

3/4 c. bisquick (or bisquit mix)
1/4 c. oil (olive oil doesn't usually work well)
    1 egg
1 pkg. Instant Pudding (vanilla, chocolate, butterscotch)
Mix together and form into small balls, flatten and put a half of a nut (pecan, walnut) on top of each. Bake at 350 degrees for 8-10 minutes.

    Potatoe Chip Cookies

1 lb. oleo (which is margarine)
    2 t vanilla
    3 1/2 C flour, sifted
    1 1/2 sugar
    1 C nuts (your choice)
    1 1/2 C crushed potato chips (plain)

Cream oleo, sugar, and vanilla. Sitr in the rest of the ingredients, adding potato chips last.

Bake 15 minutes in a 350 degree oven on an ungreased cookie sheet.

They taste something like pecan shortbread cookies.
