CIDER-BAKED TURKEY BREAST
5 to 6 lb. turkey breast
2 cups apples cider, divided
1/4 cup soy sauce
2 Tablespoons cornstarch
***Place turkey breast, skin-side up, in a large roasting pan; bake at 450 degrees for 30 minutes.
Remove turkey from oven; reduce heat to 325 degrees. Combine 1-1/2 cups cider and soy sauce together in a mixing bowl; pour over turkey breast.
Insert meat thermometer;cover and bake until meat thermometer registers 170 degrees, about 1 to 2 hours.
Remove turkey breast;set aside. Whisk remaining cider and cornstarch together; add to pan drippings, whisking well.
Replace turkey breast; return to oven until sauce thickens, about 15 to 20 minutes.
Slice turkey and serve with sauce. Makes 6 to 8 servings.
