APPLE PEAR CAKE
2 cups shredded peeled apples
2 cups shredded peeled pears
2 cups sugar
1 1/4 cups vegetable oil
1 cup raisins
1 cup chopped pecans
2 eggs, beaten
1 tsp. vanilla extract
3 cups flour
2 tsps. baking soda
2 tsps. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
CREAM CHEESE FROSTING
1 pkg. (3 oz.) cream cheese, softened
1/4 cup margarine, softened
3 cups confectioners' sugar
2 tbsps. milk
1/2 tsp. vanilla
In a large bowl, combine the first eight ingredients. Combine dry ingredients; stir into the fruit mixture. Pour into a greased 13 x 9 x 2 inch baking pan. Bake in a 325 oven for 1 hour or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
For frosting: beat cream cheese and margarine in a mixing bowl until fluffy. Add sugar, milk and vanilla; mix well.
Spread over cooled cake. Store in the refrigerator. Yield: 12-15 servings.
