    for some barbequed shrimp with Carolina red barbeque sauce...Memorial day picnics are being planned...here is a good recipe for the grill:

    CAROLINA RED BARBECUE SAUCE

    Ingredients:

    1 1/2 cups apple cider vinegar
    1/2 cup ketchup more or less to suit taste
    1 tablespoon (packed) brown sugar, more if you like your sauce sweeter
    1 teaspoon salt
    1/2 teaspoon dried crushed red pepper

    Directions:

    Stir all ingredients in small bowl until sugar and salt dissolve. (Can be prepared 3 days ahead. Cover and refrigerate.

    Now the shrimp:

    Ingredients:

    3 pounds (about 45) large shrimp, shelled, leaving the tails intact, butterflied, and deveined
    2 cups Carolina Red Barbecue Sauce

    Directions:

    Insert a 10-inch bamboo skewer at the tail end of each shrimp and thread the shrimp onto it. Brush the shrimp with the barbecue sauce and arrange them on a large platter. Just before grilling brush the shrimp again with the sauce, grill them on a rack set over glowing coals for 1 minute on each side, or until they are pink and springy to the touch, and serve them warm or at room temperature.

    Don't forget to soak bamboo in water about 30 min. before putting on shrimp to grill....don't want to catch them on fire.
