    A - Z Bread

    3 Cups Flour
    1 Tsp Salt
    1. 1 Tsp Baking Soda
    1/2 Tsp Baking Powder
    3 Tsp Cinnamon
    1. Sift dry ingredients into large mixing bowl and set aside.
    2 Cups Sugar
    1 Cup Vegetable Oil
    3 Eggs
    3 Tsp Vanilla
    1 Cup Nuts chopped, optional

    1. Beat eggs in bowl, add oil and sugar, cream well. Add A - Z and vanilla. Add dry ingredients and mix well. Stir in nuts.

    2. Pour into well greased and floured loaf pans (2-3). Approx 2 cups batter in each pan. Bake in preheated oven at 325 degrees approx 1 1/2 hours.

    NOTE: Can also put into 6 - 8 mini pans, check after approx 45 min of baking.



    A-Z List
    Apples, grated or finely chopped
    Apricots, chopped
    Carrots, grated
    Coconut, Dates, Chopped
    Peaches, fresh (peeled) or canned
    Pineapple, Crushed (Drained), Pumpkin
    Nuts, chopped. Your choice
    Raisins
    Raspberries, Strawberries, Frozen, well drained or fresh
    Cranberries, smashed or finely chopped
    Applesauce
    Bananas, Mashed
    Cherries, Chopped
    Mincemeat, Oranges, Chopped

    Combine ingredients of your choice, or use just one of the above to make 2 cups total.(rec'd from a very close friend of mine over 30 years ago and have no idea where she got it)



    Fuzzy Navel Cakes

    1 Pkg Yellow Cake Mix w/pudding in it
    4 Eggs
    3/4 Cup Peach Schnapps
    1/2 Cup Vegetable Oil
    1/2 Cup Orange Juice
    1/2 Tsp Orange Extract
    1 Cup Peach Schnapps
    2 TBLS Orange Juice
    3 Cups Powder Sugar, sifted

    1. Preheat oven to 350 degrees. Combine first 7 ingredients in mixing bowl and blend well. Pour into 6 Mini loaf pans (about a cup of batter for each) and fill half full.

    2. Bake approx 25-30 min until cake springs back when touched by your finger.

    3. Combine 1/2 Cup Peach Schnapps, 2 Tbls Orange Juice and Powder Sugar, might need to add more OJ or Schnapps to make a pourable glaze.

    4. While cakes are still warm, poke holes with fork into cakes, pour glaze over top and sides. Allow cakes to cool before removing them.




    Cocolate Kahlua Cake

    1 Pkg Chocolate Cake Mix, your choice, with pudding
    4 Eggs
    3/4 Cup Kahlua Liqueur
    1/2 Cup Vegetable Oil
    1/2 Cup Water
    1 Cup Kahlua Liqueur
    3 Cups Powder Sugar

    1. Preheat Oven to 350 degrees, Combine first 6 ingredients in large mixing bowl and blend well.
    2. Pour into 6 well greased and floured mini loaf pans. Bake 45 min.

    3. Combine Kahlua and powder sugar to make glaze,. Poke holes with fork into cakes, while still warm pour glaze on top and the sides of cake. Cool approx two hours before removing from pans.




    Golden Amaretto Cakes

    1 Pkg Yellow Cake Mix with pudding
    4 Eggs
    3/4 Cup Amaretto
    1/2 Cup Vegetable Oil
    1/2 Cup Water
    1/4 Tsp Almond Extract
    1 Cup Amaretto
    3 Cups Powder Sugar

    1. Preheat oven to 350 degrees. COmbine first 7 ingredients in large mixing bowl and blend well.

    2. Pour into 6 greased and floured mini loaf pans. Bake approx 45 min.
    3. Combine Amaretto and powder sugar to make glaze. Poke holes in tops of cakes with fork and pour glaze on top and on the sides.

    4. Cool cakes in pans at least 2 hours.




    Irish Cream Cakes

    1 Pkg White or Yellow Cake Mix with pudding
    1 1/2 Cups Irish Cream Liqueur
    1 Cup Miniature semi-sweet Chocolate Chips
    4 Eggs
    1/2 Cup Vegetable Oil
    3 Cups Powder Sugar
    1 Cup Irish Cream Liqueur

    Preheat oven to 350 degrees. Combine first 5 ingredients in large mixing bowl. Blend well. Pour into 6 greased and floured mini loaf pans. Bake 25-30 min.

    Combine powder sugar and liqueur in small bowl to make glaze. Poke holes in cakes with fork on top and pour glaze over top and sides of cakes. Allow to cool approx 2 hours before removing. (This recipe makes approx 6 - 10 cakes).

    NOTE: If you normally do not have the liqueors in your home I recommend buying the miniture bottles or the smallest bottle avail. Also, I do not use the Name Brands for these cakes, I buy the cheaper brands such as DeKyupers or whatever else is in your store. Regular Peach Schnapps;.Coffee Liquor vice Kaluaha; Hazelnut liqueur vice Amaretto and the cheaper version of Irish Cream. They will still have the flavor and save you some money.

    For gift giving I wrap in Plastic Wrap, put into the little Holiday Plastic Bags, close with a Staple or two and put a label on them as to what kind and then pop into freezer until I'm ready to give out. (Got the above 4 recipes several years ago from a cookbook called The Spirit of Christmas Cookbook, which was published by Leisure Arts). Hope you all enjoy!!
