HOLIDAY FRUIT AND PECAN WAFERS
1 Cup soft margarine or butter
1 Cup 10X confectioners sugar (powdered sugar)
1 egg
2-1/2 Cups flour
2 Cups mixed, candied fruit, cut into small pieces
(green and red cherries and pineapple only)
1-1/2 Cups pecans, coarsely chopped
1 Cup finely chopped pecans
Cream margarine or butter and sugar till light and
fluffy.
Add egg and beat.
Add flour and mix.
Stir in fruit and coarsely chopped pecans.
Divide dough in half and chill a little while in the
frige.
When dough is firm, form into two logs 1-1/2 inches in
diameter.
Roll in the fine chopped pecans.
Wrap each log in foil and freeze several hrs or
overnight.
Preheat oven to 375 degrees F.
Cut log into 1/4 inch slices and place on ungreased
cookie sheet.
Bake 12 to 14 minutes till slightly browned, being
careful not to burn the cookies.
Cool on wire racks to keep them crisp.
Store in a tightly closed container at room temperature.
