    GRILLED BURGERS WITH ROQUEFORT MAYONNAISE AND
    BARBECUED RED
    ONIONS


    Beef and Roquefort have a long-standing culinary
    partnership, but the thick and sweetly smoky slices of
    barbecued red onions are what really make these
    burgers
    great. Keep the meal all-American with chilled beer,
    homemade lemonade and iced tea. A fresh peach pie with
    vanilla ice cream is a perfect dessert.


    8 1/2-inch-thick slices red onions
    1 1/3 cups bottled hickory-flavored barbecue sauce

    3 pounds ground round beef, formed into eight 4- to
    5-inch-diameter patties
    8 4- to 5-inch-diameter hamburger buns, split
    Roquefort Mayonnaise




    Serves 8.

    ROQUEFORT MAYONNAISE





    8 ounces Roquefort cheese, crumbled
    2/3 cup mayonnaise
    2 teaspoons red wine vinegar
    1 teaspoon hot pepper sauce


    Stir all ingredients in bowl to blend. (Can be made 1
    day
    ahead. Cover; chill. Bring to room temperature before
    using.)

    Makes about 1 1/2 cups.
