    PUMPKIN SHEET CAKE

    Ingredients:
    1 can (15 ounces) solid-pack pumpkin, drained
    2 cups sugar
    1 cup vegetable oil
    4 eggs, lightly beaten
    2 cups all-purpose flour
    2 teaspoons BS
    1 teaspoon ground cinnamon
    1/2 teaspoon salt


    DIRECTIONS:

    In a mixing bowl, beat pumpkin, sugar and oil. Add eggs, and mix well. Mix flour, baking soda, cinnamon and salt, add to pumpkin mixture and beat until well mixed. Pour into a well greased & 15-inch x 10-inch x 1-inch baking pan, or sheet pans of your choice.

    BAKE at 350 for 35 to 30 minutes or until the cake tests done. Cool on a rack.

    I am using a cream cheese frosting with bit of cinnamon.

    NOTE: This cake is moist, and it could not be easier to make
