Apricot Brandy Pound Cake
Great cake for the holidays!
1 box DH yellow butter recipe cake mix
1 cup sour cream
1/2 cup apricot brandy
1 t. vanilla extract
1/2 t. orange extract
1/2 t. lemon extract
1/2 t. almond extract
1 package instant vanilla pudding mix (3.5oz)
4 large eggs, room temp
PREHEAT oven to 350 degrees and grease & flour a tube or bundt pan
Beat cake mix, pudding and the eggs until smooth.
Mix brandy and flavorings in the sour cream, and add to egg mixture.
Beat for 2-3 minutes on medium speed.
Pour batter into pan.
Bake for 50-55 minutes or until cake tests done. DO not over bake.
Cool the cake in the pan on a rack for about 20 minutes. Then remove from the pan and finish cooling on the rack
You can frost, glaze, or just dust with powdered sugar.
