    Apples w/Cinnamon Syrup
    Yields about 6 pints.

    10 lbs.Granny Smith apples,peeled & sliced into thin slices
    1/2 c.bottled lemon juice
    1&1/2 c.white sugar
    1 c.apple cider vinegar(5% acidity)
    1/2 tsp.natural hot cinnamon oil(for candy making)
    1&1/2 tsp.ground cloves
    1 T.minced candied ginger
    2 c.water
    1/3 c.light corn syrup

    In a large bowl put sliced apples,add lemon juice & stir.Put remaining ingredients in a large pot,bring to a slow simmer.Add apples,simmer about 5 minutes.

    Add apples into hot jars leaving a 1/2"headspace,pour hot syrup over apples in the jars leaving a 1/2" headspace.Slide a nonmetalic knife down between the sides of the jar,removing air bubbles.Again,leaving 1/2"headspace(More syrup may be added to do so.)Wipe rims of jars clean,place lids & bands on jars tightly.Place jars in a boiling water bath canner & process for 15 minutes.Take out of canner,let cool on double folded towels.After 24 hours check for a good seal.
