    Vanilla Cherries:
    Yields 6 pints.

    6 lbs.dark sweet cherries,or tart cherries(washed & pitted)
    2 c.sugar
    2 c.water
    1/2 c.bottled lemon juice
    2 T.double strength vanilla
    1/4 tsp.salt
    1/4 tsp.ground cardamom

    In a large pot combine sugar,water,lemon juice,vanilla,salt & cardamom.Bring to a rolling boil,reduce heat to a simmer.Add cherries to this syrup & heat thru.Pack cherries into hot sterilized jars,pouring hot syrup over them(allowing 1/2" headspace.)Remove air bubbles w/a nonmetalic knife,adding more syrup if needed to leave a 1/2" headspace.

    Wipe jar rims clean,place lids & bands onto jars & tighten.Place jars in a boiling water bath canner & process for 10 minutes.Place jars onto a double folded towel,let cool.Check for a good seal after 24 hours.
