  • Creole Spiced Pickled Okra

    Creole Spiced Pickled Okra:
    Makes about 5 pints jars.

    4 c.cider vinegar(5% acidity)
    2 T.pure kosher salt
    2 lbs.okra,cleaned & stems trimmed
    5 tsp.Creole Spice Blend(Recipe below)
    2&1/2 tsp.dried onion flakes

    Prepare & get ready all canning essentials.

    In a nonreactive pot,combine the vinegar,4 c.water & the salt.Bring just to a boil.

    Working quickly,pack the okra into the jars & put 1 tsp.spice blend & 1/2 tsp.onion flakes into each jar.Ladle the hot vinegar mixture into the jars,leaving 1/2" headspace from the top of each jar.Use a chopstick to remove air bubbles from each jar.Wipe the rims of jars,then place on lids & bands & tighten.

    Place jars into a hot water bath canner,making sure that they are covered by at least 1" of water.Bring water back to a boil & boil for 15 minutes to process.Remove jars to a folded towel & dont disturb for 12 hours.Check for a seal,if there isnt a good seal,then place jar immediately into the refrigerator.Label sealed jars & place in a dark,cool place to store.

    Creole Spice Blend: (With or w/o salt added.)
    Makes about 2/3 c.

    2 T.salt
    1/4 c.ground cayenne
    1 T.paprika
    1 T.ground coriander
    1 T.freshly ground black pepper
    2 tsp.ground cloves
    1 & 1/2 tsp.garlic powder
    1 tsp.dried thyme,crumbled

    Mix ingredients altogether & place in a spice jar.Store in a cool place.
