  • Cucumber Slaw (for freezing)

    Cucumber Slaw:

    7 cups of peeled cucumbers, sliced thin
    1 cup of onions, sliced paper thin
    1 Tablespoon of salt
    1 1/2 cups of sugar
    1 cup of white vinegar
    celery seed--add as much as you care for (I usually add about a Tablespoon)
    Fresh dill - optional

    Mix cucumbers, onions and salt. Let stand overnight. Mix sugar with the white vinegar and let stand overnight (stir occasionally) until sugar dissolves. The next day, drain the cucumber mixture well and mix with
    the vinegar and sugar. Add celery seed and fresh dill (optional) and freeze in containers. As the recipe states, "this is delicious frozen then thawed".
