Gingerbread Cookies
Note that these cookies do not have any sugar in them, got this recipe from a friend who is diabetic. These cookies are a softer type, my family prefers them to the crisp ones.
5 cups flour
4tsp. cinnamon
2 3/4 tsp. baking soda
1 tsp. cloves
1 tsp. salt
2 tsp. ginger
1 cup molasses
1/3 cup water
2 eggs
1/2 cup margarine
Cream margarine, beat in molasses, eggs, then water. Mix together dry ingredients in another bowl, then add this to the wet mixture, bit by bit: you may have to get the fingers in there at this point to combine well. Chill for at least 1 hour. On lightly foured surface, roll out portions of dough to 1/4" thickness. Cut out with cookie cutters, place on ungreased sheets, bake for approx. 10 mins. @ 350.
