This recipe is a tradition at our house. They are a soft, moist cookie. My Grandma always used a large round cookie cutter, about 3 inches, and sprinkled with granulated sugar. The dough must be completely chilled before rolling out, so it is best to mix up the day before baking.
Mom's Sour Cream Sugar Cookies
3 cups sugar
2 cups shortening (we now use unsalted butter)
4 eggs
5-6 cups flour, as needed
1/2 tsp. salt
1 tsp. soda
1 cup sour cream
1 1/2 tsp. lemon juice
1 Tbs. pure vanilla
Cream sugar and shortening (or butter). Add the eggs one at a time, beating well after each addition. Sift together the dry ingredients. Add to the creamed mixture alternating with the sour cream, beginning and ending with the flour. Begin with the 5 cups, adding more if the dough is too sticky. Add the lemon and vanilla, mixing completely. Chill the dough thoroughly. Roll out on a floured board. Using a large cookie cutter, cut out cookies, sprinkle with granulated sugar before baking. Bake at 375 degrees for 8-10 minutes. Do not overbake.
