Candy Cane Snowballs
I haven't actually made these yet. The recipe is from Taste of Home
2 cups butter softened (no substitute)
1 cup confectioners sugar
1 tsp vanilla extract
3 l/2 cups all purpose flour
1 cup chopped pecans
8 oz. white candy coating
l/3 to 1/2 cup crushed peppermint candy
In a large mixing bowl, cream butter & confectioners sugar. Stir in vanilla. Gradually add flour. Stir in pecans. Refrigerate fo 3-4 hrs. or until easy to handle.
Roll into 1 in. balls. Place 2 in. apart on ungreased baking sheets. Bake at 350 for 18-20 min. or until lightly browned. Remove to wire racks to cool. In a microwave safe bowl, melt candy coating; stir until smooth. Dip the top of each cookie into the candy coating, then into the peppermint. candy. Yield: 5 doz.
