This comes from my Aunts Mom-in-law. She is a lovely southern lady in every since of the word. This is such a good recipe. Please give it a try. Make sure the cream cheese is very cold. It is worth the prep time.
Marinated Cheese
1/2 cup olive oil
1 tablespoon lemon juice
2 cloves minced garlic
1 teaspoon granulated sugar
2 tablespoons finely chopped green onions
1/2 cup white wine vinegar
1 (4-ounce) jar diced pimientos
1 teaspoon salt
3 teaspoons chopped sweet basil
1 (8-ounce) package cream cheese ,do not set out to soften; you want it to be firm
1 8-ounce block cheddar cheese
Mix all ingredients except cheese. Cut cheese into slices. Line dish with cheddar slices. Place a cream cheese slice on each cheddar slice pour marinade over cheese and place in the icebox for at least 4 hours. Serve with crackers
