These are ALWAYS a favorite. They are so then, it's like a chip, you cannot eat just one. You would never know it was oats in the mix. It makes a TON of cookies.
Lace Cookies
2 cps old fashioned rolled oats
1 tblsp all purpose flour
2 cps sugar
1/2 tsp salt
2 sticks melted butter
2 eggs beaten
1 tsp vanilla
Preheat oven to 325. Cover cookie sheets with ungreased aluminum foil. Put oats, flour, sugar and salt into a large bowl and mix well with a spoon. Pour very hot butter over the mixture and stir until sugar has melted. Add eggs and vanilla. Stir well. Drop 1/2 level teaspoons of the mixture on foil 2 inches apart. Bake about 10 to 20 minutes until caramel color. WATCH CAREFULLY!! When cookies are completely cooled, foil will peel off. Store in airtight container. Makes SEVERAL dozen.
