Serves: 6 (105 cal, 3g fat, 1g fiber)
1 c chopped zucchini
1 c (1 large) tomato, chopped
1 c (1 medium) onion, chopped
1/3 c grated parm cheese
1/2 c reduce fat Bisquick mix
1 c skim milk
2 eggs
1/2 tsp salt
1/8 tsp pepper
Heat oven to 400F. Grease a 9" pie plate. Layer Zucchini, tomato, onion and cheese in pie plate. Stir remaining ingredients until blended. Pour into pie plate. Bake about 35 minutes or until knife inserted in center comes out clean. cool 5 minutes.
