Morning Glory Muffins
1/4 Cup LF milk (1 pt)
1/4 Cup unsweet applesauce (0 pt)
1/2 Cup eggbeaters (1 pt)
1 (15.2oz) package cinnamon streusel muffin mix (I used Betty Crocker) (3 pt)
1/2 teaspoon ground cinnamon
1 (8 oz) can crushed pinapple in juice (1 pt)
3/4 cup grated peeled Granny Smith apple(1 small apple) (1 pt)
3/4 cup shredded carrots (0 pt)
3/4 cup chopped toasted pecans (optional)
1/2 cup raisins (4 pts)

Vegetable cooking spray
1 Cup powdered sugar
1/2 teaspoon grated lemon rind
1-2 tablespoons fresh lemon juice
Whisk together first 3 ingredients until blended. Remove and reserve streusel packet from muffin mix package. Stir together contents of muffin mix packet and cinnamon in a large bowl. Make a well in center of mixture. Add egg mix,pinapple, and next 4 ingredients,stirring just until moistened. Place baking cups in muffin pans. Spoon batter into cups, filling 2/3 full. Sprinkle evenly with reserved streusel packet(I omited the streusel) Bake at 425 for 18 to 23 minutes or until golden. Cool in pans on wire racks 5 minutes. Remove from pans, and cool on wire racks. Stir together powdered sugar, lemon rind,and lemon juice until smooth, and drizzle over tops of muffins if desired.
8-9 Texas size muffins
12 points total 1-1.5 pts each without the pecans and topping. Theses were delicious.
