    Awesome Low Carb Meatloaf


    1-pound ground beef
    1-cup pork rinds crushed (pork skin chips)
    Dash of Black Pepper
    Dash of Salt
    1 egg
    ½ cup heavy cream (found in the milk aisle here)
    2 tbsp (tablespoon) Worcestershire sauce (in the ketchup aisle here)
    ¾ cup shredded cheese
    2 tbsp (tablespoon) minced onion

    Cooking Instructions:

    Crunch the pork rinds into crumbs. Put the meat in a microwave safe loaf pan dish. Add the pork rind crumbs, cream, egg, Worcestershire sauce, pepper, salt, onions, and cheese. Stir until all ingredients are mixed thoroughly and shape into loaf shape. Put into microwave and cook for 15 minutes.

    Moms Chili Recipe

    1 pd red beans boiled and put aside
    1 pd ground meat put aside
    1 pk chili seasoning
    29 oz whole tomato
    tony chac, salt, pepper, sugar, chili powder to taste

    put all in crock pot to cook

    The Best Chicken Salad

    2 boneless Chicken breast halves cooked
    ¼ cup creamy salad dressing
    4 tbsp cole slaw dressing
    1 stalk celery, chopped
    ¼ onion chopped
    salt and pepper to taste

    In food processor, combine all. Mix until well chopped.

    Potato Salad

    6 potatoes
    4-6 eggs boiled
    1-2 tsp vinegar
    2-3 big tablespoons mayo
    2-3 squirts mustard
    2-3 squirts thousand island
    season-all and salt to taste

    Boil potatoes till tender, then strain.
    Boil eggs in salt water for 10 min after the water boils
    When eggs are cool enough to handle, peel and separate yolks from white.
    Put yellow in a bowl and mash with a fork. Add vinegar, mustard and mayo until creamy and set aside.
    Mash potatoes with fork. Add egg mixture stirring well. Then add mayo, mustard and thousand island and season all and salt to taste.

    Johnny M Casserole

    1 lb. ground chuck
    1 (1 1/2 oz.) pkg. sloppy joe
    seasoning mix
    1 (6 oz.) can tomato paste
    1 1/4 c. water
    2 c. elbow macaroni
    1 sm. can peas, drained
    1 sm. can corn, drained
    2 c. grated sharp cheddar cheese

    Cook beef. Stir in seasoning mix, tomato paste and water. Cook macaroni. Drain. Stir in meat mixture, corn, peas and 1 cup grated cheese. Put into casserole dish. Sprinkle with one cup cheese. Bake at 350 degrees for 45 minutes.

    Carrot Fritters

    2 pounds carrots
    1 cup sugar
    1 cup flour
    2 eggs
    2 tsp vanilla
    2tsp baking powder

    Wash and peel carrots. Slice and boil carrots until tender. Drain carrots and mash with a fork until mushy. Combine all ingredients and mix into carrots. Spoon out and fry in fry pan of hot oil until golden brown on both sides. Makes about 16-18 fritters. Can dust with powdered sugar if you want.

    Deviled Eggs

    12 eggs
    ¼ cp mayo
    ¼ cp grey poupon

    Jello Dessert

    1 pkg jello orange flavor into 1 cp boiling water. Add 2 cups softened vanilla ice-cream. Spoon dessert cups and refrigerate for 20 min. serve.

    Chive and Onion Potatoes

    2 lbs potatoes
    ½ cp milk
    1 tub 8oz philidelphia chive and onion cream cheese spread.
    ¼ cp kraft ranch dressing.

    Boil and mash potatoes and gradually stir in milk, cream cheese and dressing until light and fluffy.


    1 15oz part skim ricotta cheese
    2 ½ cps Kraft mozzarella cheese
    ½ cp grated parmesan cheese
    ¼ cup parsley
    1 egg lightly beaten
    1 jar 26 oz spaghetti sauce
    1LB ground beef drained
    1 cp water
    12 lasagna noodles

    Preheat over to 350. Mix Ricotta cheese, 1 ¼ cp mozzarella cheese, ¼ cp parmesan cheese, parsley, egg until well blended. Set Aside.

    Pour spaghetti sauce into skillet. Pour water into empty sauce jar. Pour into skillet. Stir.

    Place 1 cp meat sauce on the bottom of casserole dish so that noodles won’t stick to bottom. Layer 3 noodles, 1/3 of ricotta cheese and 1 cp meat sauce. Do this 2 more times and top with remaining 3 noodles and sauce.

    Sprinkle with remaining 1 ¼ cp mozzarella cheese. Cover tightly with well greased aluminum foil. Bake 45 min.

    Remove foil and bake additional 15 min.

    Cool a little, cut and serve.

    Mexican Mac

    1 lb ground beef
    2 cps water
    1 cp salsa
    1 pkg 14 oz mac and cheese
    2 cps corn
    ½ cp Mexican cheese
    1 grated onion

    Brown meat and stir in water, salsa, mac and cheese. Bring to boil, reduce to low heat and cover. Simmer 10 min or until mac is tender. Add corn and cheese sauce. Sprinkle with cheese and serve.

    Chips-a-hoy pie

    Crush 16 cookies. Mix 1 ½ cups of the crumbs with 1/3 cp melted butter and make crust.

    1 ½ cups milk and 1 pks 4 serving size chocolate instant pudding. Stir in 2 cups cool whip.

    Spoon into crust and refrigerate 30 min. Top with rest of crumbs.

    Spaghetti Casserole (Baked Spaghetti)

    8 oz spaghetti
    8 oz sour cream
    8 oz cream cheese (cut up)
    1 lb ground beef
    30 oz spaghetti sauce
    1 cp mozzarella cheese ( I use 2)

    Cook the ground beef. Cook the spaghetti and drain. Put in the cream cheese in the hot spaghetti and then the sour cream and mix well. Put spaghetti in the bottom of casserole dish. Layer some cheese, then beef, then more cheese. Then the spaghetti sauce on top and then more cheese. Bake at 350 for 30-35 min. Serve

    Easy Cheese Burger Casserole

    1-2 pds ground beef
    4 cups cooked rice
    1 cp velvetta cheese
    1 family size cream of chicken soup
    1-2 cps shredded cheddar cheese

    Combine meat, velvetta, and soup while hot and stir until cheese is melted. Spread into
    baking dish and top with cheddar cheese. Heat 350 degrees for 20 min.

    Christmas Cookies

    3 ½ cp flour
    1 tsp baking powder
    1 ½ cps butter/margarine
    1 cp sugar
    2 pkgs 4 serving Jello Strawberry Gelatin or any other flavors
    1 egg
    1 tsp vanilla

    Preheat oven to 400 degrees
    Mix flour and baking powder and set aside
    Beat butter with electric mixer on medium until creamy. Gradually stir in sugar and 1 pkg dry gelatin. Beat until light and fluffy. Add egg and vanilla and mix well. Gradually add flour mixture and beat until well blended. Shape into 1 inch balls about 2 inches apart. Sprinkle lightly with remaining pkg dry gelatin. Bake 8-10 min until lightly browned

    Magic Meatloaf

    1 pd Ground Meat
    2 eggs
    2/3 cp quick cooking oats
    1 pk dry onion soup mix
    ½ cp ketchup

    Reserve 2 TB ketchup, set aside. Combine all ingredients. Shape into loaf. Top with remaining ketchup. Cover and cook on low for 8-10 hours or on high for 4-6 hours.

    Fav. Chili

    ½ pd pinto or red beans
    2 can 14 ½ oz tomatoes
    1 pd ground meat
    1 green bell pepper
    1 medium onion
    2 cloves garlic
    2-3 TB chili powder
    1 tsp black pepper
    1 tsp cumin
    1 tsp salt

    Completely soften beans, put all ingredients in stoneware. Cover and cook on low for 10-12 hours or high for 5-6 hours.

    Tamale Pie

    1 pd ground meat
    1 can tomato paste
    5 tbsp chili powder
    ¾ cp grits
    3 cp water
    1 small onion
    salt to taste

    Brown meat and onions. Add tomato paste. Cook slowly for 5 minutes. Add 2 tbsp chili powder and cook 10 minutes. Remove from heat and fix grits as follows. Put 3 cps water to boil with salt and 3 tbsp chili powder for 2 minutes and then add grits and boil for 3 minutes. Pour into pan in this order. Grits, meat, grits, cook in 450 degree oven for 20 minutes. Serve Hot.

    Bingo Chili

    1 pd ground meat
    1 large onion
    1 can whole tomatoes
    2 TB flour
    1 oz chili powder
    Salt to taste

    Strain tomatoes, reserve liq. Brown onions in a little water. Add ground meat. Mix well. Add chili powder. Now add flour. Stir well. Add tomatoes and juice to pot. Water may be added if chili is too thick. Stir until chili comes to boil, cover and simmer on low heat, stiring occasionally for 1 and ½ hours. This recipe can be made with 10 pds ground meat for 3 pds chili. Beans may be added.

    Easy make bread

    1pk yeast
    2 cps warm water
    ¼ cp sugar
    1tsp salt
    2 oz cooking oil
    6 cps flour

    Cook in bread machine.

    Peanut Butter Cookies
    ¼ cup margarine
    ¼ cup soft shortening
    ½ cup peanut butter
    ½ cup sugar
    ½ cup brown sugar
    1 egg

    Sift Together: 1 ¼ sifted gold medal flour
    ½ tsp baking powder
    ¾ tsp making soda
    ¼ tsp salt

    Mix all first ingredients, then add sifted ingredients together. Chill dough. Roll into balls the size of a walnut. Place 3 inches apart on lightly greased pan. Flatten with fork dipped in flour and criss cross. Bake until set, but not hard. Heat oven to 375 degrees for about 10-12 minutes. Makes 3 dozen.
