    This is my favorite on a cold day and its only 3 points per cup!

    Taco Soup

    1 pound lean beef
    1 onion
    1 can diced tomatoes
    1 can Rotel tomatoes
    1 can pinto beans
    1 can chili beans
    1 can corn-drained
    1 package taco seasoning
    1 package ranch dressing
    1 can water
    Brown meat, drain. Dump everything else in. Simmer 1 hour,or put in crock pot.

    This cake is AWESOME!

    Yellow Cake

    12 servings....2 points each

    1 Yellow Cake mix
    1 sm. can mandarin orangws
    3/4 c. unsweetend applesauce
    8 egg whites
    mix well. Bake in 9x13 pan

    1 8 oz. ff cool whip
    1 20 oz. pineapple-crushed
    1 small package, sugar free vanilla pudding
    Mix pineapple w?pudding fold in cool whip
    spread on cake

    ** When I make this.I change it a little. I put the pineapple in the cake and the pudding in the cake and the mandarin oranges in the FF whipped topping.. I just like it better that way.

    Baked Chimichangas

    8 oz cooked chicken, turkey, pork, beef (1 1/2 c.)
    1 oz jar salsa
    1 16 oz can FF refried beans
    1 41/2 oz. can green chili peppers, drained
    3 TBS thinly sliced green onions
    4 oz. reduced fat monteray Jack or cheddar cheese, (shredded 1C.)
    8 (8-9 in) flour tortillas
    Shred meat. In large skiller combine meat salsa, beans, chili peppers, and green onoins. cook and stir over medium heat until heated. Stir in cheese. Mean while, wrap tortillas in foil and warm in oven at 350 for 10 min. For each chimichanga, spoon about 1/2 mixture into a tortilla near one edge. Fold in sides, roll up. Place in a 13 x 9 inch pan Bake uncoveres in a 350 oven for 15-20 minutes or until heated and tortillas are crisp and brown. Serve with additional ff sour cream, salsa

    Breakfast Muffins(one point only!)

    1 small can pumpkin
    1 box any flavor cake mix( i have used spice cake and coconut, and yellow and choclate))
    1/2 cup water
    Mix until smooth. Divide into Muffin tins. Makes 22-24 muffins. bake fot 8-10 minutes at 350. Dont over bake or they get kinda rubbery. I like them a little bit underdone.
    They are only one point ach. Great warmed up and sprayed with butter spray

    W.W. Angel Biscuits
    Servings 8
    1 point per serving.

    1 cup self-rising flour
    cup skim milk
    2 Tbs. reduced fat mayonaisse

    Preheat oven to 400. spray muffin tin with non-stck spray.
    Stir ingredients together, and fill eight muffin cups. Bake for 18-20 minutes, or until golden brown.

    W.W. butterscotch dessert

    3 cups diced apples
    1 small can crushed pineapple(drain of liquid)
    1 cup mini marshmallows
    1 pkg. sugar free/ fat free butterscotch Jell-O pudding(instant)
    T 8oz tub fat free Cool Whip.
    Combine all ingredients in a lg. bowl. mix well. Keeps in the refrigerator several days.
    1 cup= 1 point

    Zucchini Beef Casserole

    3/4 lb lean gr. beef
    1 tsp garlic powder
    1 cups diced zucchini
    1-14oz can diced tomatoes, drained
    cup instant rice
    cup water
    1/4 cup chopped onion
    1/4 cup reduced sodium soy sauce
    3/4 tsp dried basil

    Crumble beef into a 1 qt. microwave dish. Sprinkle with garlic powder. cover and microwave on high for 2 minutes.; stir. Heat 1-2 mins longer, or until no longer pink; Drain. Stir in remaining ingredients. cover and microwave on high for 20-25 minutesor until vegetables and rice are tender, stirring twice.

    Serves 4
    1 cup = 5 points.

    This is like a quiche
    Easy Garden Bake.

    1 cup chopped zucchini
    1 large tomato-chopped (1 cup)
    1 med. onion chopped (1cup)
    1/3 cup grated parmesan cheese
    1/2 cup reduced fat bisquick
    1 cup fat-free milk
    1/2 cup fat-free egg beaters, or two eggs
    1/2 tsp salt
    1/8 tsp pepper.

    1. Heat oven to 400º. grease 9 in. pie plate. Layer zucchini, tomato, onion, and cheese in pie plate.
    2. stir remaining ingredients until blended. Pour into pie plate.
    3. Bake about 35 minutes, or till knife inserted in center comes out clean.

    Serves 6
    2 points per serving

    for variation try it with what ever veggie you have on hand, broccoli, cauliflower.

    Cinnamon Bran Muffins

    2 c. Kelloggs Extra Fiber All Bran Cereal
    1 1/2 c. f/f milk

    Soak cereal in milk for 15 minutes.

    1 1/4 c. flour
    1/4 c. sugar (or 1/2 sugar & 1/2 Splenda)
    4 tsp. baking powder
    1 1/2 tsp. cinnamon
    1/4 c. golden raisins

    Mix dry ingredients in a bowl.

    2 egg whites in a measuring cup
    apple butter added to egg whites to make 1/2 cup or a little over
    Mix together

    Add egg white mixture to cereal Add wet to dry ingred. and mix until blended. Don't over beat.

    Spray 12 muffin cups (med. size) with cooking spray. Divide batter into the 12 cups.

    Bake 350 degrees 18 - 25 min.

    In my confection oven I bake 18 min. In my gas stove I bake 24 min.

    1 1/2 pts each


    Chocolate Bran Muffins

    1 Betty Crocker Sweet Rewards Brownie Mix
    (I find them at Super WalMart)
    3 cups Kelloggs Extra Fiber All Bran Cereal
    2 1/2 c. water
    1 1/2 tsp baking powder

    Soak cereal in water 5 - 15 min.
    Add baking powder to brownie mix
    Add web ingred. to dry brownie mix.
    Keep stirring, it will all mix together.

    Spray muffinn tins with cooking spray
    Fill muffin tins about 1/2 full

    Bake at 350 degrees for 20 min.

    I add 1/4 c. mini choco. chips

    Makes 30 muffins at 1 pt each
    24 muffins at 2 pts each
    18 muffins at 3 pts each

    2 3 pt muffins = 5 pts
    2 2 pt muffins = 3 1/2 pts

    For 18 muffins, use larger muffin pans (6 per pan)

    Both of these muffin recipes freeze well. I wrap in plastic wrap and put in freezer in a zip lock bag. The Cinnamon bran muffins I wrap in plastic wrap and keep in the refrigerator in a zip lock bag. I then warm them in the microwave on 50% power about 1 min.

    Pizza Casserole
    6 servings 3 pts ea

    l poind lean ground beef
    1/2c. green peppers
    15 oz tomato slauce
    1 tsp garlic powder
    1/2 t. oregano
    1/2 t. onion salt
    1/4 t. pepper
    4 oz. grated no fat cheese
    2 0z. no fat parm. cheese
    1 c. canned mushrooms
    4 1/2 oz egg noodles
    Brown beef, green pepper, inion. Drain. Add tomato sauce, garlic, onion salt,oregano, pepper. Combine, POur over noodles in a 9x13 pan. Sprinkle cheese and top with mushrooms. Bake at 400 for 10 minutes

    Chunky Vegetable Dip
    Serves 8
    yeild 1/3 cup per serving @ 1 point per.

    1 lb. far-free cottage cheese
    1 med,celery stalk, diced
    1 med. carrot, diced
    1 med sweet red pepper diced
    1/4 cup shallots, finelt chopped
    1/8 tsp hot pepper sauce
    or to taste
    1/8 tsp. black pepper

    Combine all ingredients in a small bowl;mix well season to taste and serve.
