    Maple Turkey Sausage

    Servings: 4

    1 pound lean ground turkey

    1 tablespoon maple syrup

    1/4 teaspoon freshly ground black pepper

    1/8 teaspoon mustard powder

    1/8 teaspoon ground cloves

    1/8 teaspoon ground sage

    Pinch ground cinnamon

    Pinch ground allspice

    Pinch ground mace

    Optional: 1/4 teaspoon natural maple flavoring

    Mix together all the ingredients in a bowl. Cover and refrigerate overnight.

    Shape the mixture into 4 flat patties. Cook over medium heat in a nonstick skillet or grill pan for 3 minutes on each side or until cooked through.

    Chicken Scampi

    1 lb. chicken cut in 1-inch strips
    1/4 c. egg sub. or 2 egg whites
    1/3 c. It. seasoned no salt bread crumbs
    cooking spray
    2 Tb. butter or stick marg.
    3 cloves garlic, minced(I use less)
    1 c. fat free, lo sodium chick broth
    3/4 c. dry white wine(use table wine less sod. than cooking)
    1 1/2 tsp. dry parsley
    1 1/2 tsp. Mrs. Dash
    1/4 tsp. oregano
    1/8 tsp. salt (I use none)
    3 c. cooked linguine
    1/4 c. Parmesan

    Dip chicken in egg then crumbs. Saute 6 min. in nonstick skillet sprayed with cooking spray. Remove from pan. Melt butter on med-hi heat, add garlic, saute 1 min. Add broyh & next 5 ingredients, bring to boil, add chicken, lower heat and simmer 20mins.
    Serve over linguine season with Parmesan.

    Hint: to lower salt even more I save water from steamed veggies and use instead of broth.
