I got those today too. The first thing I thought was to cut the carbs down by making the following crust.
Cottage Cheese Pie Shell
3 egg whites---room temp
1/2 tsp cream of tartar
2 Tbsp pourable Splenda
2 egg yolks
2 Tbsp cottage cheese (fat-free)
(I mash this with a fork to make
tiny pieces).
Preheat oven to 300 degrees. Separate eggs and beat whites with cream of tartar and Splenda until stiff. Beat egg yolks lightly. Fold yolks and cottage cheese into stiffly beaten egg whites. Spray pie plate with Pam, pour in mixture and shape to conform to plate. Bake for 1/2 hour. (6 grams of carbs in entire crust).
I have made this for myself and other diabetics and it is surprisingly good, even though it sounds strange.
I also have a pumpkin filling to put in it if you are interested.
