    SPICY CORNBREAD


    1 cup unbleached flour
    3/4 cup cornmeal
    2 teaspoons baking powder
    1 teaspoon chili powder
    1/2 teaspoon dried oregano
    1 cup corn
    2 scallions, minced
    1 cup 1% milk
    1/2 cup fat-free egg substitute
    2 tablespoons honey
    1 tablespoons olive oil

    Coat an 8x8 baking pan with no-stick spray.

    In a large bowl mix the flour,cornmeal,baking powder,shili powder and oregano. Stir in the corn and scallions.

    In meduim bowl, whisk together the milk, eggs,honey and oil.Pour over the flour mixture.Mix with a rubber spatula until the dry ingrediants are moistened;do not overmix.

    Spread in the prepared pan.Bake at 350 degrees for 25 minutes .
