Glazed Orange-spice Carrots
2 ½ cps carrots, thinly sliced
Water
½ cup orange juice
1 ½ tsp cornstarch
1/8 tsp powdered ginger
1/8 tsp nutmeg
Fresh cilantro or parsley sprigs (optional)
1. Steam carrots over water until just tender.
2. Meanwhile, combine orange juice, cornstarch, ginger and nutmeg in a saucepan. Heat over medium heat until sauce begins to thicken. Stir in carrots and heat through. Serve garnished with cilantro or parsley, if desired.
