    Rice Pilaf

    1 cup brown rice, uncooked
    2 stalks celery, chopped
    1 medium onion, chopped
    1 T. reduced calorie margarine
    1 4oz can small mushrooms, whole
    1 10 oz. Can beef or chicken broth
    tsp black pepper
    1 cups water

    Combine all ingredients in a 2 qt casserole dish. Cook, covered at 350 for 1 hour.

    Makes 6 servings
