if you want to try some thing low in points, try spraying whole okra with a blast of olive oil and bake it whole. it does not taste slimmy and can be eating like finger food. let me know how you like it.

sound good, I fix mine this way and DH and I can eat almost all of it. no set amounts, just add what you want.

    Baked okra
cut up okra (about 1 inch pieces)
    green tomato ,diced
    bell pepper ,diced
    ripe tomato, diced
    med onion chopped.
salt & pepper, ,spray baking dish ,add veggies in layers and loosely cover with foil, bake @350 for 1 hour, stirring twice.
    I organize chores into catagories.
Things I won't do now; things I won't do later; things I'll never do.

Highclass, how long do you bake it for, and at what temperature? Sounds like something I might like to try today.

I havent tried this yet because I'm having a problem finding fresh okra here, but I plan to, as soon as I can find some. Do you think it work with whole frozen okra if I thawed it and let it dry a little?
