    I found a recipe in the cookbook called Lost Recipes by Marion Cunningham and because I try to keep my family on a low fat, low cholesterol diet, I modified it with good results.

    3 Tbsp butter
    1 6-oz can of tomato paste
    1 tsp sugar (it also tastes good without this in it)
    1/2 cup water
    Salt/pepper to taste


    1-1/2 cups of bread crumbs (I used Progresso Italian)
    1/4 onion finely chopped
    Equivalent of 1 egg of Eggbeaters
    1 lb ground turkey
    1 Tbsp Worcestershire sause
    2 Tbsp mustard (I use horseradish mustard)
    1/2 cup water
    Salt/pepper to taste

    To make the sauce for the top : Heat the butter in a small saucepan. Mix in the rest of the ingredients until mixed and hot. If it becomes too thick, add more water.

    MEAT LOAF: Preheat oven to 350 degrees. Saute the onion in a nonstick pan and cooking spray until opaque. Mix in with all the meat loaf ingredients. Mix the meat loaf by using your hands. Spray an 11 x 4-1/2 baking dish. Put meat mixture in baking dish and pat into loaf shape. Spread the sauce on top (it's okay not to use all of it). Cover with foil and bake 1 hr.

    This is very good eaten on sandwiches the next day.
