Cauliflower w/Paprika-Garlic Sauce (low carb)

4 cups small cauliflower flowerets
2 cloves garlic, minced
1 tsp olive oil or cooking oil
2 tbsp apple juice
1 tbsp snipped fresh parsley
1 tbsp red wine vinegar
1 1/2 tsp paprika
1/8 tsp salt

In large saucepan with steamer rack, steam cauliflower over boiling water, covered, about 8 minutes or until crisp-tender. Meanwhile, for sauce,in a small saucepan, cook the garlic in hot oil for 30 second. Remove from heat; stir in apple juice, parsley, vinegar, paprika and salt. Heat through. Transfer cauliflower to serving dish. Pour sauce over hot cauliflower, toss to coat. 4 servings 42 calories/1 g total fat/7g carbs/2g dietary fiber
