    Low Fat Banana Bread

    1 cups all-purpose flour
    1 tsp baking powder
    tsp baking soda
    1/8 tsp salt
    tsp cinnamon
    2 slightly beaten egg whites
    1 cup mashed banana
    cup sugar
    2 tablespoons oil
    2 tablespoons applesauce (I used cinnamon flavor)

    In a medium mixing bowl, stir together flour, baking powder, baking soda, cinnamon and salt.
    In a large mixing bowl, stir together egg whites, bananas, sugar, oil and applesauce.
    Stir flour mixture into banana mixture until just moistened. Do not over mix!
    Spray an 8x4x2 inch loaf pan with nonstick spray. Spread batter in prepared pan. Bake at 350 for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
    Cool bread in the pan for 10 minutes. Remove from pan and cool thoroughly on a wire rack.
    Makes one loaf. (12 servings)
