    I eat low carb, my family doesn't. I made this for supper last night and my family loved it. It is so good.

    Mexican Quiche
    (8 large servings...7.1carbs per serving)
    (1 serving = 1/4 of 1 pie)

    1 medium/small onion(chopped)-9.5
    3 pounds ground meat-0
    1 package Old El Paso Taco Seasoning-24
    (Remove one tablespoon of seasoning and set aside)
    1 cup Colby Jack Cheese-3.2

    1- 4 ounce can chopped green chilies-5.2

    3 eggs-2
    3/4 cup no sugar added mayonnaise-0
    1/3 cup heavy cream-3.6
    3 cups Colby Jack Cheese-9.6

    Preheat oven to 350.

    Chop onion and cook until very soft a little oil. Brown ground meat in with the onion; drain. Mix in the rest of the seasoning packet (minus the one tablespoon) and the cheese. Stir until it is well mixed and the cheese is melted.

    In a medium size bowl beat the eggs well and whisk in the mayonnaise, the reserved taco seasoning and the cream. With a spoon, stir in the cheese.

    Spray two 10-inch Pyrex pie plates with cooking spray. Divide the meat mixture evenly between the two plates. Open the green chilies and divide them between the two plates and spread them out evenly over the meat mixture. Divide the topping between the two plates and place them into a 350 oven and bake for 30 minutes.

    Remove from oven and let sit for 10 minutes before cutting.

    I serve it with shredded lettuce, chopped tomatoes, sour cream and salsa.
